I love chocolate and coconut, so when I can combine the two into something healthy (in moderation of course!) it’s a win-win! Recently I’ve been playing around with the Keto/Atkins Diet, which is all about low carbs and higher fat and Protein. Carbs are everywhere and trying to stay full without them has been a challenge! After looking around I noticed lots of Keto Bombs with higher fat and low carbs, and usually high calorie- ick!, that looked good but not within what I was looking for. Taking what I saw I decided to play and see what I could come up with. Here is the end result, and it’s all stuff I had on hand already; since starting to play with the Keto/Atkins Diet rules.
Chocolate Coconut Bombs!
42grams Dark Chocolate
2 tbsp Peanut Butter
1 tbsp Chai Seeds
2 tbsp, Coconut Butter
2 tbsp, Coconut Oil
10grams Unsweetened Coconut Flakes
Step 1) Microwave the chocolate with coconut butter and coconut oil, until melted and smooth.
Step 2) Stir in the peanut butter till smooth. Add the Chai seeds, and coconut flakes to the mixture and stir to combine.
Step 3) Dived mixture into icecube tray, ~1 tbsp in each cavity, to create 10 servings.
Step 4) Freeze till firm and then store in the freezer. Enjoy in moderation but so very yummy!
Each Bomb is ~102 calories, 3g Net Carbs, and 9g Fat.
