Seeds and Ginger Chocolate Bombs

I had some leftover seeds and cranberries from a salad the other day, that just needed to get used up. While looking through the kitchen trying to figure out what I could use them in, I found that I was running low on Keto snacks in the freezer. Realizing that, I had an inspiration about what to do with them so I grabbed some chocolate, coconut butter, and a few more things to play around with making a Keto snack. This is what I came up with, pretty good and lots of flavors with the seeds and ginger! I know, fresh ginger.. really?? Yes! Ginger is healthy in so many ways and it’s flavorful without being high in anything. Totally worth playing with it! 

Seeds and Ginger Chocolate Bombs

  • 1/2 oz Shelled Pumpkin Seeds, not the kind directly from the pumpkin 
  • 1.5 oz Sunflower and Dried Cranberries
  • 3 oz Dark Chocolate
  • 2 oz Coconut Butter
  • 1 tsp Fresh Grated Ginger, you don’t need much! 
  • 4 tbsp Unsweetened Coconut Flakes

    Step 1) Break the chocolate up a little if needed and combine with the coconut butter in a heatproof bowl. Microwave at 30sec intervals to melt the chocolate and coconut butter, once melted mix together.

    Step 2) Mix the ginger, coconut, pumpkin seeds, sunflower, and dried cranberries into the melted chocolate. Make sure to break up the ginger clumps and get it distributed evenly with your other ingredients.

    Step 3) In an ice cube tray measure out a tablespoon of the mixture into each cube and freeze for at least an hour before enjoying.

I really like the ginger zing in these Keto snacks and the crunch of the seeds! Enjoy! 

 

Note:  ~129 calories, 6g Carbs each (1 tbsp)
