Even though it’s been years since I posted this, I still love German Pancakes! Its kind of like the jumbo version of a popover and really easy to make. All it is a little flour, a little milk, and a few eggs.
Typically I make these German Pancakes in the oven, but having sold our stove and its replacement wasn’t set to arrive for a few more days, I turned to the microwave for help. I am super excited about the new stove! It is a dual-source stove with all the bells and whistles! Anyway, back to the topic on hand. These turned out great and are a quick and easy fix for that craving when you don’t want to wait!
German Pancake in the Microwave!
1/4 cup Milk
1/4 cup All-purpose Flour
2 eggs
1 tbsp butter *Do not forget this! I’ve used Pam and it doesn’t work nearly as well*
Fiestaware Mini Pie Pan, or even a large heat-proof soup bowl should work. Pancake will puff up, so use a dish large enough to provide it some support
Step 1) Mix the flour and eggs to form more of a paste.
Step 3) Add the milk and stir well. Meanwhile add butter to the dish, and melt the butter in the microwave. Once the butter is melted add batter to the pan.
Step 4) Microwave on High for 3 minutes. Pancake will puff up, so use a dish large enough to provide it some support.
Step 5) Once it’s done let it sit for a minute to finish cooking, Remove from microwave; CAUTION container will be HOT! Top with favorite toppings; mine is lemon juice and powdered sugar.
